If the hummus appears too thick or isn’t reaching your desired consistency, gradually add more water (or aquafaba), one tablespoon at a time, until it’s perfectly smooth and velvety. The amount of liquid needed can vary based on the chickpeas and tahini used, so adjust as necessary. Continue processing until there are no remaining lumps and the texture is silken.

Step 4: Taste and Adjust. Once smooth, taste the hummus and adjust the seasonings as needed. You might want to add more lemon juice for extra tang, a pinch more salt, or additional spices to suit your preference. This is your chance to personalize the flavor profile.

Instructions

 

  • With the food processor running, drop the garlic cloves in through the feed tube to chop fine.
  • Stop processor and add all of the rest of the ingredients. Start with 5-6 tablespoons of water (or aquafaba from canned chickpeas) and add more depending on how creamy you want the hummus. Serve immediately or hold in the refrigerator for 4-5 days.

Feel free to customize this recipe with extra lemon juice or spices to suit your individual taste preferences. For an even creamier hummus, don’t hesitate to add more water or aquafaba, starting with 1 tablespoon at a time until you reach your desired consistency.

When selecting your garbanzo beans, I personally prefer Eden Foods no-sodium-added organic garbanzo beans. If using other brands of canned beans, remember to check the label for sodium levels and adjust the amount of added salt in the recipe accordingly to avoid over-salting your hummus.

For an extra smooth texture, some chefs recommend peeling the chickpeas before blending, though this step is entirely optional and adds a bit more prep time.
