Ingredients
  

  • 8 ounces  cream cheese at room temp, softened
  • 1 tablespoon finely chopped shallot
  • ¼ cup sour cream
  • ¼ cup Mayonnaise or Vegenaise
  • 1 lemon, zested
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh chopped tarragon
  • 2 tablespoons fresh chopped dill plus extra for garnish if desired
  • 2 tablespoons fresh chopped Italian parsley
  • 1 tablespoon finely chopped chives
  • ½ teaspoon anchovy paste optional
  • ½ teaspoon kosher or sea salt
  • ¼ teaspoon ground black pepper or white pepper
  • 4-6 heads Belgian endive depending on size

Instructions
 

  • In a medium bowl, combine the softened cream cheese, finely chopped shallot, sour cream, mayonnaise, lemon zest, lemon juice, fresh chopped tarragon, dill, Italian parsley, chives, anchovy paste (if using), kosher or sea salt, and ground pepper. Mix thoroughly until all ingredients are smoothly blended and the mixture is completely homogeneous. Refrigerate the mixture until it is well chilled and firm enough for piping or scooping. For optimal flavor development and a truly enhanced taste, it is highly recommended to make the filling a few hours ahead of time, or even a full day or two in advance, allowing the herbs and other ingredients to meld beautifully. Remember to taste and adjust the seasoning as needed before chilling.
  • When you are ready to serve, remove the well-chilled filling from the refrigerator. If you desire an elegant and visually striking presentation, transfer the filling into a disposable piping bag that has been fitted with either a star or French tip for decorative flair. Gently trim the very bottom of the stem end of the Belgian endive heads and carefully peel the individual leaves away from the base, taking care to keep them intact. Arrange these crisp leaves artfully on your chosen serving platter. Then, pipe a generous amount of the herbed cream cheese filling into each delicate leaf. Alternatively, for a more relaxed and casual serving style, simply spoon the creamy filling into a small decorative bowl or ramekin and arrange the endive leaves, along with an assortment of crackers or other raw veggies, around it, allowing your guests to help themselves freely.
