  • Select the “sauté” function on your Instant Pot and allow it to pre-heat until the display shows “hot.” Add the extra virgin olive oil, then add the chopped onion, carrot, celery, and fennel. Set the timer for 7 minutes to sauté these aromatic vegetables, stirring occasionally to ensure even cooking and to prevent burning. This step is crucial for building the foundational flavors of your soup. Towards the end of the sauté cycle, stir in the finely chopped garlic, dried herbs (Italian blend, Herbs de Provence, or thyme), and tomato paste, cooking for an additional minute until fragrant. 
  • Next, pour in the low-sodium broth, add the rinsed French green lentils, and season with sea salt and ground black pepper. Give everything a good stir to combine. Carefully place the lid on the Instant Pot and turn it to lock. Ensure the steam release handle on top of the lid is turned to the “sealing” or closed position. Select “pressure cook” (or “manual” on older models) and set the timer using the [+] button for 15 minutes. Once the Instant Pot completes its warm-up and cooking cycle, it will beep to signal it’s done. Allow the Instant Pot to naturally release pressure for 15 minutes to ensure the lentils are perfectly tender and to prevent foam from spraying from the valve. After 15 minutes, carefully quick release any remaining pressure by pressing “cancel” and then turning the steam release handle on top of the lid to the “venting” position. Stand clear of the steam.  
  • Once all the pressure has been released and the float valve has dropped, carefully unlock and remove the lid. Give the soup a good stir, taste, and adjust seasonings if necessary. Serve your hearty Instant Pot lentil soup immediately with your favorite garnishes. This delicious soup keeps wonderfully for up to four days in the refrigerator and freezes exceptionally well for future meals.

Stir well and cook for an additional minute, allowing the tomato paste to slightly caramelize and the aromatics to become fragrant. Then, pour in the broth and add the rinsed French green lentils. Bring the soup just to a boil, then immediately reduce the heat to low. Cover the pot with a lid and let the soup simmer gently until the lentils are tender to the bite. Begin testing for doneness after 20-30 minutes. If the lentils are not yet tender enough, continue to simmer for a few additional minutes until they reach your desired consistency.
