Prepare the Creamed Sauce and Simmer Onions

  • In a small bowl, combine the cornstarch (or arrowroot) with an equal amount of cold water (e.g., 1.5 tablespoons cornstarch + 1.5 tablespoons water) and whisk until completely smooth. This is your slurry.
  • In a medium saucepan (about 3 quarts), add the heavy cream or full-fat coconut milk and bring it to a gentle boil over medium heat, stirring occasionally to prevent scorching.
  • Once boiling, reduce the heat slightly and gradually whisk in the cornstarch slurry. Continue whisking constantly for 1 minute until the sauce thickens and any raw cornstarch taste is cooked out.
  • Turn the heat to low. Stir in the ⅓ cup of water, followed by the peeled pearl onions, balsamic vinegar, fresh thyme, sea salt, white pepper, and granulated garlic. Stir gently to combine everything.
  • Cover the pan and simmer gently over low heat for 15-20 minutes, or until the pearl onions are perfectly tender when pierced with the tip of a sharp paring knife.
  • Remove from heat. Stir in the ground nutmeg and grated Parmesan cheese (if using). Taste and adjust seasoning if needed. Serve hot.

Make-Ahead Tip: These creamed pearl onions are perfect for preparing in advance. They can be cooked a day or two ahead of time and stored in the refrigerator. To reheat, place them in a covered dish in the oven at 350°F (175°C) or in a covered pan over low heat on the stovetop until thoroughly hot. Add a splash of milk, cream, or water if the sauce needs to be loosened.
