For optimal stability and ease of turning on the grill, double-pronged bamboo skewers are highly recommended. If using bamboo skewers, remember to soak them in water for at least 30 minutes prior to grilling to prevent them from burning. Next, prepare your Prosciutto or bacon by laying out the strips and slicing them in half lengthwise. For smaller scallops, you might even cut them into thirds for a better fit. Wrap one strip of the cured meat tightly around each scallop, ensuring the ends overlap to secure it. Finally, thread three of these beautifully wrapped scallops onto each skewer, making sure they are spaced evenly.
  • Once skewered, lightly drizzle both sides of the scallops with a good quality olive oil. Season them gently with sea salt, granulated garlic, and freshly ground black pepper. Remember to go easy on the salt, especially if using Prosciutto or bacon, as the cured meat already contributes a significant savory, salty flavor. A little seasoning goes a long way to enhance the natural sweetness of the scallops without overpowering them.

These are an inexpensive and highly recommended tool, readily available for purchase online on Amazon. Alternatively, you can use two standard bamboo skewers for each set of three scallops to achieve similar stability. If your skewers are too long for your grill, a pair of kitchen shears can easily trim them to the desired length. Remember to soak bamboo skewers in water for at least 30 minutes before use to prevent burning.

When purchasing Prosciutto, always check the label to ensure it contains only pork and salt. This guarantees a high-quality product without unnecessary additives.
