Salad

  • 4 slices bacon
  • 2 heads broccoli crowns (about 1 ½ pounds)
  • ⅓ cup dried cranberries (or raisins or goldenberries)
  • ¼ cup chopped walnuts
  • 2-3 tablespoons red onion (chopped or sliced thin)
  • 2 tablespoons pumpkin seeds (raw or toasted)

Prep Ahead Directions (optional)

  1. To prep ahead: trim, steam and chill broccoli, then refrigerate. Fry the bacon, drain and chop, then refrigerate. Chop the onion, then refrigerate. Make the dressing and refrigerate. Toss all components together just before serving.

To Make and Serve

  1. Whisk the dressing ingredients together until smooth in a medium bowl and set aside. Fry the bacon until crisp, drain on paper towels, and chop. While the bacon is cooking, prepare the broccoli.
  2. Fill a large bowl half full with ice and cold water for an ice bath. Trim broccoli florets into bite-sized pieces (aim for 8 cups of florets). In a medium pot, add a vegetable steam basket with enough water to come to the bottom of the basket. Cover and bring to a steam over medium-high heat. Add the broccoli and steam for just 2 minutes until crisp-tender. Immediately remove the broccoli to the ice bath to stop the cooking and retain its bright green color and crispness. Dry thoroughly on a clean kitchen towel.
  3. To serve, add the bacon, dried cranberries, walnuts, red onion, pumpkin seeds, and the thoroughly dried broccoli to a large mixing bowl. Pour the dressing over the salad and toss gently to ensure all ingredients are evenly coated. Serve immediately for maximum crispness, or refrigerate for an hour before serving to allow flavors to meld and to ensure it’s perfectly chilled.

Notes

Substitutions:

  • Dried fruit: For a lower-sugar option, try Golden Berries. They offer a pleasant sweet-tart taste with less sugar.
  • Nut and seed options: Experiment with cashews, slivered almonds, shelled hemp seeds, pine nuts, or shelled sunflower seeds. Macadamia nuts are also a delicious, rich choice.
  • For vegans: Omit the bacon and use a plant-based mayo (e.g., Vegenaise) in the dressing.
  • For vegetarians: Simply omit the bacon.
  • Mayonnaise alternative: If you’re not a fan of mayonnaise, plain Greek yogurt can be used to make a tangier, high-protein dressing.
